Mugello Chestnut Flour PGI is the heart of our production: a product of excellence obtained exclusively from chestnuts grown in the woods of the Tuscan Apennines, in the territory recognized with the prestigious Protected Geographical Indication.
The harvest takes place by hand in late autumn, when the chestnuts reach their peak ripeness. After careful selection, the fruits are slowly dried using traditional methods and stone-ground to preserve all the aromas and nutritional properties of the fresh chestnuts. The result is an amber-colored flour, very fine to the touch, with an unmistakable aroma that evokes the forests of the Mugello.
PGI chestnut flour is naturally gluten-free, rich in fiber, complex carbohydrates, and minerals such as potassium, magnesium, and phosphorus. It is a versatile and precious ingredient in the kitchen: ideal for preparing the classic Tuscan castagnaccio, sweet polenta, crepes, cakes, cookies, and fresh pasta.
Its sweet and enveloping flavor, with notes of honey and light roasting, makes it unique compared to common chestnut flours. The PGI certification guarantees that every phase — from cultivation to milling — takes place strictly within the Mugello territory, according to historical regulations handed down from generation to generation.
