Dried chestnuts are obtained by drying fresh chestnuts, traditionally in metati, small buildings where the fruits dry slowly over heat. How to soak dried chestnuts
Before cooking, dried chestnuts must be rehydrated: soak them in cold water for at least 4-6 hours (overnight is best). Then cook them in fresh water for 40-60 minutes, until they are soft. The soaking water can be used to flavor soups and broths.
